Tarragon Pesto 
Tarragon PestoTarragon makes an aromatic and versatile pesto. I have chosen to just simply serve it with some seared Tuna steaks tonight which I will cook blue, however, you can add a little cream to it and serve the sauce over fresh pasta. Another great way to use Tarragon pesto is to tuck a small amount under the skin of some chicken breasts and bake them or make a Tarragon dressing for a Chicken Salad.

Recipe

Makes approximately 1 cup

1/2 cup fresh tarragon leaves
1-11/2 cups fresh parsley leaves
2 large garlic cloves
1/2 cup freshly grated parmesan
1/2 cup pine nuts
1/2 cup olive oil
salt and freshly ground black pepper

Combine the tarragon, parsley, garlic, cheese and pine nuts in a food processor. Process to mix. With the machine running, slowly add the olive oil. Season to taste with salt and freshly ground black pepper and process to the desired consistency.
